Restauranteur Casper Balistreri, formerly of the Venice Club in Brookfield, set out in 2011 to replicate the flavor of the sausage available at an Italian butcher shop in Milwaukeeʼs Historic Third Ward when his parents were children.

The Old Third was the center of the immigrant Italian community at the beginning of the twentieth century.

Balistreri founded The Casper Sausage Company and developed Aspano Italian Sausage using his grandmotherʼs 100-year-old recipe from Porticello, Sicily. The six sausage varieties are made fresh weekly using the finest all natural ingredients with no preservatives.

Italian-Americans at Milwaukeeʼs Italian Community Center, who recall the flavor of the original Third Ward sausage, compliment the authentic taste of Aspano Italian Sausage.

Aspano Italian and Italian-Style Sausages are available at the Brookfield Farmersʼ Market and from The Casper Sausage Company. The sausage is also used to top pizzas at Cafe La Scala in the community center.
